Where the numbers come from
Weights come from King Arthur Baking’s ingredient weight chart, read on 28 September 2026. Cups and spoons are US customary: 1 cup is 236.6 ml, 16 tablespoons or 48 teaspoons. A metric cup (250 ml) holds about 6% more.
Volume is only ever an estimate for dry ingredients: how tightly a cup is filled changes its weight. When a recipe gives grams, weigh.
Questions
How many grams are in a cup?
It depends on the ingredient, because a cup measures volume and grams measure weight. A US cup of all-purpose flour is about 120 g, granulated sugar about 198 g and butter about 227 g (King Arthur Baking). Water is about 237 g.
Why do sites give different grams for a cup of flour?
Because of how the cup is filled. Spooned in and levelled, a cup of all-purpose flour is about 120 g; scooped straight from the bag it packs down and can weigh 20–30 g more, which is where the 125 g figure comes from.
